Vegan Dal with Coconut Rice

This recipe is not suitable if you have a histamine intolerance. Instead, try my super creamy low histamine winter curry

Winter Curry

Serves 2
Cooks in 20 Minutes
Difficulty Easy

INGREDIENTS

1 small onion, chopped
2 garlic cloves, chopped
1tbsp coconut oil
1 thumb size piece ginger, peeled & chopped
2 carrots, diced
generous pinch of turmeric
200g red lentils, washed and drained
1tsp curry powder
pinch of cumin
to taste salt
1 can coconut milk
300ml vegetable broth
For the coconut rice:
1 cup basmati rice
1 cup coconut milk from the can
1/2 cup water

Method:

Place the onion and garlic into a pot, add coconut oil and fry. Add the carrots, spices and lentils. Pour in the coconut milk and vegetable broth and cook until the lentils are soft and the Dal is creamy.

For the rice, place the rice, water and coconut milk into a pot. Add some salt and cook until the rice is soft and all the liquid is absorbed. If the rice is still not done, add some more water.
