Vegan Mac and Cheese

The best recipe for “mac and cheese” that is all vegan and gluten-free. It is absolutely creamy and deliciously “cheesy”. If you still have sauce left over you can just freeze the rest in portions.

250 g glutenfree pasta
1 sweet potato, cooked
1 potato, cooked
1/2 onion, roasted in the oven
2 garlic cloves, roasted in the oven
2 tbsp olive oil
55 g sunflower seeds / cashews nuts
25 g nutritional yeast
170 ml veggie stock
250 ml oat milk, bit more might be needed
1/2 tsp paprika
Pinch salt & pepper


Boil the potatoes and roast the onion and garlic. Add all the ingredients to a blender and blend while the pasta cooks (cook pasta according to instructions on package).

Mix the pasta with the sauce and serve with fresh parsley.
