Quinoa Pizza

Serves 1 small Pizza

INGREDIENTS

Pizza dough:
2tbsp flour (buckwheat or spelt)
1 tsp baking powder
2tbsp grounded flaxseeds
1tbsp olive oil
To taste salt & dried herbs
150ml water
100g quinoa, rinsed
Toppings: tomato sauce, tomatoes, onions, vegan cheese (you can choose whatever you like)

Method:

Preheat the oven to 180°C and line a baking tray with baking paper. Place all the ingredients for the base, except the quinoa into a food processor and pulse for a few seconds. Add the rinsed and uncooked quinoa and mix until you have a thick and gooey consistency. This can take a few minutes. Distribute a bit of flour on to the lined baking tray and pour the dough on top. Form a round shape with a spoon and bake for 10-15min. Add your favourite toppings and bake for another 15min. I made a simple Pizza with tomato sauce, tomatoes, onions and vegan cheese but you can use whatever you love!
