Polenta Pizza

This is my super easy and delicious polenta pizza. You only need two ingredients!

I love to make this during the week because it’s super fast and I don’t need to buy any special ingredients for it. To change it up, I top the pizza crust with whatever I feel like in the moment. Right now I love the combination of arugula and mushrooms. Of course, you can top it off with anything you’d like.

230g Polenta
700ml Vegetable broth


Bring the water to a boil and stir polenta in. Simmer for about 5 minutes, stirring constantly with a whisk. Preheat the oven to 200 degrees and spread the polenta on a lined baking sheet. If the polenta sticks too much the spoon, then put a sheet of baking paper on top of the dough and roll it out. Top the pizza crust with your favorite toppings and bake for 25-30min.

P.S I always like to add fresh herbs or arugula on top after baking.
