One Pot Curry Noodles

This recipe is mostly histaminefree but if your tolerance to histamine is very low I would do some adjustments. Leave out the chili and lemon juice and you are good to go!

Difficulty Easy

INGREDIENTS

100g rice noodles/bean noodles
1 garlic clove, chopped
1 tbsp coconut oil
1 thumb size piece of fresh ginger, chopped
To taste chili flakes
1/4 tsp turmeric
To taste salt
1 bell pepper, cut bite-sized
1 zucchini, cut bite-sized
1 broccoli, cut into florets
1 can coconut milk
Juice of 1/2 lemon
To serve: sesame seeds, freshly chopped coriander and chili flakes

Method:

Place the garlic and ginger into a pot. Add the coconut oil and fry until golden. Add the rest of the veggies and spices and mix. Add the coconut milk and lemon and simmer for about 10min. Add the noodles and cook until tender. Serve with sesame seeds, fresh coriander and chili flakes.
