Honey Roasted Squash

This honey roasted squash is delicious and a great addition to your menu for the holidays and colder days.

Tip for histamine intolerance: brush with olive oil and sprinkle with pine nuts

 

Serves 1 Squash
Cooks in 30 Minutes
Difficulty Easy

INGREDIENTS

1 squash pumpkin
handful pomegranate seeds
1 tbsp olive oil
1 tbsp balsamic vinegar
Juice of 1/2 lemon
Pinch Salt and pepper
To decorate honey, walnut, feta

Method:

Preheat the oven to 180 degrees and cut the squash in half.

Mix the olive oil, balsamic vinegar, honey and lemon juice in a bowl and brush over the halves.

Bake for 30 mins/until soft. Then sprinkle with walnuts, feta, salt & pepper.
