Have you ever tried eggplant pizza. I think this is going to be my new go-to pizza recipe! Perfect for a stressful week.

Difficulty Easy

INGREDIENTS

1 Eggplant
Pinch Salt
1 Tbsp. Olive oil
2-3 Tbsp. Tomato sauce
100 - 150g Mozarella / vegan alternative
Optional Cherry tomatoes, olives

Method:

Slice the egplant into about 2cm slices and sprinkle with a little salt. Leave for 10min and then blot the liquid with kitchen paper.

Bake in the oven at 180 degrees for 10min. Spread with tomato sauce and top with cheese. 10min in the oven and ready.
