Back to school crispy gnocchi salad. The recipe is quick to make and therefore perfect for the stressful school, university and work day! All ingredients are gluten-free and lactose-free and above all incredibly delicious.

INGREDIENTS

Gnocchi
Handfull Arugula
1 cup tomatoes
vegan feta
Basil Pesto
70 g cashews / pine nuts
2 cups fresh arugula
2 cups fresh basil
4 Tbsp olive oil
50 ml water
pinch salt

Method:

Cook the gnocchi according to package instructions or fry them in the air fryer for an extra crispy flavour.

Cut tomatoes and arugula and mix it together with the feta and the gnocchi in a bowl.

Add all the ingredients for the basil pesto to a food processor and mix until well combined. Pour it over the salad, mix and enjoy!
