Creamy Zucchini Soup

Soup simply feels like a hug from the inside. It’s also the easiest thing to make on a cold day. It can be cooked quickly and is also great for freezing. I love anything that can be prepared as a meal prep.

Serves 2
Cooks in 20 Minutes

INGREDIENTS

2 zucchini, diced
70 g peas
1/2 onion
1 garlic clove
Pinch salt & pepper
1 Tbsp olive oil
200 g veggie stock
60 g coconut milk
Some thyme

Method:

Sauté the vegetables in a pot with a little olive oil and season. Add the liquid ingredients and simmer until the vegetables are soft (approx. 10-15min)

Puree everything with a hand blender or in a blender. Enjoy
