Cinnamon Stars

INGREDIENTS

250g almond flour
1tbsp chiaseeds/grounded flaxseeds, soaked in 3tbsp water for 5min
90g coconut sugar
3tbsp maple syrup
Pinch of vanilla
2tsp cinnamon
Glaze: powdered sugar with lemon juice

Method:

Preheat the oven to 160°C and line a baking tray with baking paper. Mix all the ingredients for the cookies in a bowl and knead until you have a dough. Form a ball and cover with a plastic wrap. Place in the fridge for about 30min for the dough to firm up a bit. Roll out the dough and use a star shape cookie cutter and cut out the stars. Place on the lined baking tray and bake for 10min. Let them cool off.

For the glaze, mix together powdered sugar and lemon and distribute on the cookies.
