Carrot Cake Bites

Happy Easter!

A healthy treat for the whole family! If you have a histamine intolerance, use almonds and if you want a nut free alternative you can also use grounded tigernuts:)

Serves 15-20 balls
Cooks in 10 Minutes
Difficulty Easy

INGREDIENTS

80g shredded carrots
180g pitted Medjool dates
150g nuts (I like walnuts and pecan but you can also use almonds)
2 tbsp coconut flour/almond flour
40g raisins
Pinch of salt
1 tsp vanilla
1/2 tsp cinnamon
Toppings: shredded coconut, melted coconut butter

Method:

Place all the ingredients (except for the toppings) into a food processor and mix until you have a sticky dough. I like to keep some bits and pieces of the nuts and carrots in. Roll into balls and place on a plate. Roll the balls into shredded coconut or melt some coconut butter and drizzle on top!
