This sweet potato & apple soup is divine! Since it’s only made out of veggies it has a super fine flavour where you can really taste each ingredient. You can store the soup for 3 days in the fridge or freeze it. If you want you can also add 1 tsp per person flaxseed oil right before eating and mix again to add some extra flavour and creaminess but you don’t have to. I couldn’t imagine how an apple would fit into a soup but I’m completely hooked! This is hands down the best soup I’ve ever eaten! What I love about it, too is that this sweet potato & apple soup is made out of such seasonal wintery ingredients. They are so easy and cheap to find and combined turns out to be a super delicious and healthy meal.

INGREDIENTS

300 gr sweet potato
1 apple
400 gr carrots
1l vegetable broth

Method:

Peel the sweet potato and carrots and cut them into small pieces. Cut also the apple into small pieces but leave the skin on, it has so many vitamins. Place everything into a pot and sweat it for a few minutes on low temperatures. Pour 1 liter of vegetable broth into the pot and let it cook for about 25 minutes. Once the vegetables are soft, purée everything.
