Superfood Beet Salad

Beetroot is such a healthy and delicious vegetable. It fights inflammations, lowers blood pressure, gives energy, supports detoxification and is rich in valuable nutrients and fiber. These are enough reasons to include it in a healthy and histamine free life.



I love to make this beetroot salad and just eat it as it is or make it as a side dish. The combination of apple and beetroot and the nutty taste of the hemp seeds is overall on the sweeter side and tastes great with a savory cheese like lactose free feta or mozzarella for lunch or a chicken dish for dinner. Beetroot has its own very distinguished taste and I used to not be a fan of beetroot but I am obsessed with this salad!




Serves 2

Difficulty Easy


300 gr cooked or raw beetroot
1 apple
50 ml apple juice
2 tbsp olive oil
2 tbsp apple vinegar
hemp seeds


Mix olive oil, apple vinegar, apple juice and salt. Grate the beetroot and apple into fine pieces. Mix everything together and let it set for a few min in the fridge before digging in.
