The summer has so many incredible fruits to offer. One of my favourites is peach. There are just so many delicious ways to make incredible recipes with peach. You can make sweet recipes like my peach cake from my book, Happy Healthy Food or salty ones like this peach arugula salad. When I was a child I couldn’t stand mixing sweet and salty together, today I’m absolutely obsessed with it! This Peach Arugula Salad is the perfect light dinner or side dish for a barbecue. In any case, you can’t go wrong serving this and it surely will change people’s perception on a typical salad.

INGREDIENTS

200 g arugula
1 peach
30 g pine nuts
150 g Feta cheese (lactosefree if needed)
1/2 lemon, juice (optional)
1 tbsp olive oil
to taste salt

Method:

Place the arugula in a large bowl. You have the option to roast the peaches and pine nuts if you want but you don't have to. If you don't want to roast them, just slice the peach and add it to the salad as well as the pine nuts. If you decide to roast them. Take two small pans, cut the peach into slices and place them in the pan. Roast for a few minutes on each side until golden. Take the second pan and do the sam with the pine nuts. Add both to the salad afterwards. Add olive oil and salt as well as lemon if you can tolerate it. Mix well. Cut the Feta into small cubes and distribute on top.
