Who said salads are boring?

Lots of people have the misconception that salads are bland, always taste the same and are not satisfying. This salad will surely prove you wrong! Red rice, almonds, herbs, crunchy radishes and creamy cheese make this salad to a real flavor explosion. It’s so fresh, hearty and delicious and so so easy to prepare.

This is such a great dish full of healthy ingredients. The almonds cover your healthy fats packed with fiber, protein, vitamins and magnesium, the dark green leafs are full of iron, antioxidants, vitamins, minerals and calcium. Radishes are a great vitamin c source and keep your skin glowing. Red rice is rich in fiber, antioxidants, iron, vitamins and nutrients.

Hence, this red rice salad is a natural power source! It’s nourishing, satisfying and everything but boring!

Difficulty Easy

INGREDIENTS

150 g Red Rice
35 g Almonds
10 Radishes
1 Package arugula
50 g mixed fresh herbs (parsley, basil, dill, chives
100 g Feta cheese, lactosefree if needed (optional)
To taste salt
2-3 tbsp Olive oil
1/2 lemon, juice (optional)

Method:

Wash the rice in a strainer and place into a small pot. Cook in double amount of water until the all the liquid is absorbed. If you want, you can add some vegetable broth powder to add some extra flavor. In the meantime, wash all the leafs, herbs and radishes. Slice the radishes, chop the herbs and cut the arugula in half. Place all the ingredients into a salad bowl. Once the rice is done and cooled down, add it to the salad. Chop the almonds and sprinkle on top. Add olive oil, salt and if you are using it, lemon juice. Mix well. Crumble the Feta cheese and add it if you want.
