This quinoa cranberry salad with candied almonds might look like a lot of ingredients but it’s actually super easy to put together. Also, this is one of those salads, where I personally don’t need to go and buy anything. I always have these ingredients in my pantry because you can use them for so many recipes.

What I love about this salad is that it’s so nourishing and such a delicious combination of foods. In general I’m obsessed with sweet potato. I used to never eat them but since I live in Israel it’s such a basic ingredient and I eat it almost daily. The combination of sweet, sour and salty with a creamy texture is just heaven!

I really recommend making a large portion of this salad and take any leftovers to work the next day. Your co-workers will be super jealous when they see this delicious salad!

If you are vegan, just leave out the cheese, it’s really not a must and the salad tastes just as amazing without. If you do like cheese and would enjoy it then go for it!

The candied almonds are what makes this recipe extra special. If you are not up for experiments, again no need but give it a try, it’s really yummy.

INGREDIENTS

100 g quinoa
300 g sweet potato, diced
pinch of salt
1/2 tsp olive oil
40 g dried cranberries (without sugar or additives)
50 g feta cheese, crumbled and lactosefree (optional)
For the candied almonds:
35 g almonds, halved
1/4 tsp coconut sugar
1/4 tsp coconut oil
For the dressing:
1 tbsp olive oil
1 tbsp apple cider
2 tbsp organic apple juice
1/4 tsp salt

Method:

Preheat the oven to 200°C and line a baking tray with baking paper. While the oven is preheating, dice the sweet potato, place them on the baking sheet and brush them with just a bit of olive oil. Add some salt and bake for about 20 min, until soft.

In the meantime, cook the quinoa. Boil water in a kettle and place the quinoa in a pot. Add 200 ml of the boiled water and simmer for about 15 min until all the water is absorbed. Take the pot off the stove and let it soak and cool off for another 5-10 min.

Now, prepare the candied almonds. Place the halved almonds, coconut oil and coconut sugar into a small pan and heat it up. Stir constantly until the nuts are covered with sugar. For the dressing, mix all the dressing ingredients together.

Lastly, mix everything together! Place the quinoa and sweet potato into a bowl. Add the cranberries, crumbled cheese and candied almonds. Mix with the dressing and enjoy!
