I’m obsessed with comfort food! There is no reason why a hearty and delicious meal cannot be healthy. This flatbread with herbs and cauliflower is made of only natural and healthy ingredients and tastes absolutely divine!

I love the crunchy flatbread with the sweet onion, fresh herbs and nutty cauliflower. This is my absolute favorite combination but the fun part is you can vary it so much. You can leave the cheese out if want or even add my incredible pesto sauce! If you feel like different flavours you can also add my bell pepper sauce and Mozarella:). You can give your creativity absolute freedom.

One thing is for sure though, you have to try this recipe!

Serves 6-8 pieces

INGREDIENTS

For the Flatbread:
300 g buckwheat flour
200 ml water
2 tsp baking powder
1 tbsp olive oil
1/2 tbsp dried mixed herbs
2 tbsp seeds (pumpkin seeds/hemp seeds/sunflower seeds), chopped
For the topping:
1/2 cauliflower
dash of chili
1 small white onion
100 g feta cheese, lactosefree if needed (optional), crumbled
1/2 handful fresh herbs, parsley and/or basil

Method:

Preheat the oven to 180°C and line a baking tray with baking paper. Place all the ingredients for the flat bread into a bowl and knead well. Place the dough on to the baking tray and form into an oval shape. Bake for 15 Minutes, until golden brown.

In the meantime, prepare the topping by cutting the cauliflower and onion into slices and fry in a pan with some olive oil or coconut oil until ready. Use salt and pepper to taste.

Take the flatbread out of the oven, add the cauliflower mix, cheese and herbs and cut into 6-8 slices.
