Tip: you can use any nuts that you like or can digest well. I love to use walnuts, cashews and almonds but if you have a histamine intolerance I recommend sticking to almonds and brazil nuts only.
Place the pitted dates and mixed nuts into a food processor and mix until you have a sticky dough. I actually like to keep the nuts in pieces rather than finely mixed but that's totally up to you. Roll the dough into about 20 balls and roll in your desired topping. Store in an airtight container in the fridge.
