Detox Salad with lots of flavours and veggies

This detox salad is my new favourite quick lunch. It’s filled with flavour thanks to the fresh parsley, maple syrup and lemon juice. I also really love the veggie combination of carrots, broccoli and cauliflower with the crunchy pumpkin seeds. This salad surely is a super easy way to get lots of veggies into your day. All you have to do is pop all the veggies into a food processor and the salad is already done! Also, no need to through away the stems that you are not using for the salad. I keep them for a stir fry for the rest of the week.
I created this salad because I felt like a new veggie combination for a fresh and nourishing salad. Sometimes I catch myself of falling back to the same recipes so it was surely time for some new inspiration. I hope you love it as much as I do!

INGREDIENTS
Method:
Place all the veggies (broccoli, cauliflower, carrots) in a food processor until finely chopped (or chop by hand). Add into a large bowl and stir in the pumpkin seeds, raisins, cranberries and parsley. Add the olive oil, lemon juice, olive oil, maple syrup and salt to taste. Enjoy!
