Coodles are the best invention since Zoodles;)

If you are looking for a light, delicious and fast meal these Coodles – carrot noodles with tahini sauce are the recipe for YOU! You already know, that my zucchini pasta is one of my all time favourite go-to recipe. If you enjoyed my zoodles, you are going to love coodles. The main difference between the two (besides that one is made with zucchini and the other with carrots), I like to eat my coodles raw, while the zoodles are cooked.

The combination of the crunchy carrots and creamy tahini sauce is so divine and a must make recipe if you are looking for an easy and quick meal full of goodness. I’m so obsessed with Tahini, I always have a big jar of it in my fridge and eat it with literally EVERYTHING. Wether it’s a simple salad, oven roasted veggies or coodles, tahini makes every dish so delicious.

My favourite quick lunch

Since I love a warm dish for dinner these coodles – carrot noddles with tahini sauce are my favourite quick lunch recipe at the moment. I also love to sprinkle some fresh basil on top but that’s completely optional. Would love to see your coodles creations. INGREDIENTS

4 large carrots
For the Tahini Sauce:
25 g Tahini
1/2 tsp olive oil
dash of salt
1/2 tsp honey
1/2 tsp lemon juice
40 ml cold water
1 tbsp sesame
handful fresh basil (optional)

Method:

Peel the carrots and spiralize them with a spiralizer. Place the coodles into a large bowl. For the Tahini sauce place all the necessary ingredients into a mixer and blend until smooth. Add as much sauce as you want and mix well. Sprinkle some sesame seeds on top. If you want you can also add some chopped fresh basil.
