It’s Christmas…in my mouth!

You already know that I always need a snack and I’m obsessed with everything sweet, yummy and easy to make. Therefore, I had to create a raw energy ball that embodies everything I love about Christmas.

Thanks to the dates, the Christmas Energy Balls are super gooey and hold together just perfectly. For me, the combination of apples and almonds are a classic winter and Christmas combination. Of course, what makes these Christmas Energy balls so christmassy are all the spices. When you take a bite, you have the a Christmas explosion in your mouth!

This recipe is such an easy way to make yourself a healthy treat without compromising on any of the Christmas flavours. I made them the other day for some friends and they were literally gone in a minute. Everybody just loved them and I hope so will you!

Difficulty Easy

INGREDIENTS

100 g apples, dried
250 g dates, dried and pitted
55 g almonds
1/2 tsp gingerbread spices (cinnamon, anise, clove, pimento)
1/4 tsp vanilla, grounded
ground tigernuts, chopped almonds, shredded coconut (to roll the balls in)

Method:

First, place the almonds in a food processor until its grounded into small bits. Add the rest of the ingredient and pulse until you have a sticky mass. You might have to stop the food processor in between, scrape the dough from the sides and continue mixing. Roll into 16 balls. Choose your favourite topping such as chopped almonds, shredded coconut and/or grounded tigernuts and roll the balls in it. Store in an airtight container in the fridge.
