Cauliflower and coconut how dreamy does that sound?

This recipe is music to my ears and a taste explosion in my mouth! Whoever thinks that soups are bland and boring have to try this spicy and creamy cauliflower coconut soup and you will never think the same about soups! I absolutely love to make soups when it’s cold out. First of all they are great to freeze so you always have a meal ready when you don’t have time to prepare anything. Also, soups are so nourishing and warming especially when it’s cold outside.

This flavoursome soup is absolutely dreamy and a must make for the whole family!

Difficulty Easy

INGREDIENTS

400 g cauliflower
1/2 tsp cinnamon
Pinch of nutmeg
Pinch of chili
1-2 tbsp olive oil
To taste salt and pepper
Optional: 1 small white onion, 1 garlic clove
1/2 hanful coconut chips, sugar free
200 ml coconut cream (no additives)
400 ml vegetable broth (yeast free)

Method:

Preheat the oven to 180°C. Cut the cauliflower in equal florets and place into a small baking dish. If you want to you can add the onion halved and the garlic clove. Sprinkle all the spices and olive oil on top. Mix with a spoon and bake for about 25 min. Add the coconut chips and bake for another 5 minutes. Place everything into a pot, add the coconut milk and vegetable broth and simmer for another 5 minutes. Use a hand blender to mix everything to a creamy soup.
