Happy Food!

Just thinking about this creamy and crunchy blueberry tarte, puts me in such a good mood! Healthy and delicious food just makes me happy, especially when it’s dessert;).

If you ran out of blueberries, you can also use frozen blackberries, cherries or whatever your heart desires.

Enjoy this easy blueberry tarte with friends and family because food always brings everybody together, am I right?

INGREDIENTS

For the base:
220 g oat flour/oats grounded into flour (glutenfree if needed)
1 tsp Vanilla
Pinch of salt
40 g coconut oil
100 g maple syrup
For the filling:
600 g frozen blueberries
30 g maple syrup
4 tbsp chia seeds

Method:

Preheat the oven to 180°C and take out a round tarte tin (you can also use the bottom of a cake tin). Place all the needed ingredients for the base into a large bowl and mix well. Roll out the dough between two baking sheets until its a few mm thick. Place the base, with the baking sheet it's lying on, on to the baking tin. Bake for 15-20 minutes until the base is golden.

In the meantime, prepare the filling by placing all the needed ingredients into a pot. Cook on low temperature until the blueberries start to fall apart and you have a thick jam.

Once the tarte base is done, let it cool off and distribute evenly the jam. If you have any jam leftover, store it in an airtight glas in the fridge.
