Baked Apple Stuffed with Oatmeal

This stuffed baked apple with oatmeal is my absolute go-to recipe when I want to make a healthy and delicious recipe that at the same time is super easy and quick to prepare. The whole combination of ingredients already tastes so much like Christmas to me. I especially love this recipe while curling up on my couch with a warm blanket and let this dish melt in my mouth.
This recipe is also so perfect when you invite a large group over to your house as its so easy to make and I can guarantee that everybody will love every bite of it! I especially enjoy it with a scoop of coconut yogurt on top. It’s a lighter version to the typical vanilla ice cream and tastes perfect and creamy with this baked apple stuffed with oatmeal.
INGREDIENTS
Method:
Preheat the oven to 190°C. Use a seeder or a knife to carefully remove the core of the apple but be careful not to cut all the way through or the filling will run out. Place the cored apples into a baking dish.
Place all the ingredients into a large bowl and mix everything with a spoon. Fill the apples with the mixture and distribute the rest of the filling around the apples in the baking dish. Bake for about 30-40 minutes (depending how big the apple is). The apple is supposed to be soft enough to easily cut through with a knife. Eat is as it is or serve with some coconut yogurt.
