Vegan Chanukka Donuts

Tonight is the first of eight nights of the festival of lights and I wish everybody who is celebrating Happy Chanukka! The traditional baked good on this holiday are Donuts filled with Jam. Since those are cooked in a lot of oil and not really that healthy nor glutenfree or histaminefree, I had to find a healthy and tasty alternative that everybody will love!
These vegan Chanukka Donuts are super gooey and juice in the middle. You can either use one of your favourite jams or make one yourself like my blueberry chia jam from my book, Happy Healthy Food.
In order for this recipe to go smoothly, make sure, the dates you are using are nice and soft and that you stored them on room temperature. Medjool Dates are perfect for this recipe because they are big and juicy. You can still use other dates just make sure you soak them in warm water for about 10 minutes to soften squeeze out the rest of the water and then use them.
This holiday is one of my favourites since it’s such a happy occasion, and the lights everywhere look so beautiful.

INGREDIENTS
Method:
Place all the ingredients into a food processor and mix until you have a sticky dough. You can add a dash of water to make the mixture perfect.
Take a tsp full of dough, flatten it in you hand and add 1/3-1/2 tsp of jam in the middle. Fold the sides around and roll into a ball. Place some shredded coconut into a small bowl and roll the donut inside. Store in the fridge.
