Mango Coconut Muffins

These mango coconut muffins are not only super delicious but also the perfect snack to go. You can just grab one and enjoy it on the way to school or work. They are super fruity, moist and beyond delicious. The fun part is that you can make these muffins throughout the whole year! you can just switch out the Mango for any seasonal fruit that is available and keep on baking. This is such a great recipe to prepare over the weekend and you have breakfast and snack options for the whole week!

Method:
Preheat the oven to 180°C and line a muffin tray with muffin paper. Dice the Mango and place into a large mixing bowl. Add the rest of the ingredients and mix well. Distribute evenly into the muffin cups and bake for about 25 minutes.
Let the muffins cool off completely on a baking tray.
