My favourite Snack

If there is one thing you can always find in my fridge is a box full of energy balls. I always make sure that I make some over the weekend so I always have something to snack on when needed. The best part is that energy balls only take 5 minutes to prepare, are super tasty, healthy and you can customise then to you taste. You can for example use another nut instead of almonds or add some spices such as cinnamon. You can also use instead of cranberry a different dried fruit such as apricot, cherry or blueberry.

This snack is not only great for the afternoon low at the office desk but also an amazing energy boost before you hit the gym or after, when you need a small snack before a meal. Trust me, the 5 minutes you spend on the weekend to prepare those bad boys will be so worth your while. Instead of grabbing for a chocolate bar you can enjoy a healthy snack that is so much better for you and keeps you satisfied longer.

Serves 20 Energy Balls
Cooks in 5 Minutes
Difficulty Easy

INGREDIENTS

100 g almonds
100 g dried cranberries (without any additives and sugar)
1/2 tsp vanilla, grounded
240 g dried dates, pitted (ideally Medjool dates)

Method:

Place the almonds into a food processor and ground into small bits. Add the rest of the ingredients and mix again until you get a smooth and sticky dough. Form into about 20 energy balls and store in the fridge in an airtight container.
