Summer Vibes

When it gets warm I could literally only eat salads. I love how fresh they are and how they are so incredibly many ways to combine them so it never gets boring. Also, I always adjust my salad to how hungry I am. This endive salad for example can be an amazing mid week dinner. In that case, I would add the cheese but it can also be a delicious side for a barbecue or any other dish, in which case I personally would leave out the cheese.

This endive salad feels so much like summer thanks to the fruity nectarine and bitter endives. Endives are actually super healthy. Some of the health benefits include an enhanced digestion, it promotes stronger bones, is brain food, helps improve vision…

This salad surely is a must this summer!

Serves 2
Cooks in 10 Minutes
Difficulty Easy

INGREDIENTS

1 Endive
2 handful mixed leafs (arugula, herbs..)
1 nectarine, sliced
1 Beetroot, roasted or vacuum packed beetroot
2 tbsp nuts/seeds of your choice (I used walnuts and pumpkin seeds)
60 g Feta (optional)
Dressing:
1 tsp honey
1/2 tsp salt
40 ml balsamic
2 tbsp olive oil

Method:

Wash the endives and the leafs and place them into a salad bowl. Slice the beetroot and nectarine and add to the leafs. Chop the nuts and sprinkle on top.

For the dressing, place the honey into a small glass and add a bit of hot water just enough for the honey to melt. Add the rest of the ingredients, mix and pour on the salad. Mix the salad and crumble the cheese on top if used.
