Spicy Sweet Potato and Coconut Soup

Method:
Dice the onion and place into a pot. Add the olive oil and cook until soft. Add the diced sweet potatoes and sweat for a few minutes on low temperature. Pour the coconut milk on top, add salt to taste and cook for about 10-15 minutes until the sweet potatoes are soft. Mix everything with a hand blender until creamy. Serve with harissa paste and coconut yogurt.
