Tip: The only ingredient that is not suitable if you have a histamine intolerance are the cashews. You can substitute them with Macadamia nuts! Soak the Macadamia nuts the same way and you will also get a super nice and creamy texture:)

INGREDIENTS

For the base:
100g oat flour
100g almond flour
60g coconut oil
50g maple syrup
Pinch of salt
Pinch of vanilla
For the Blueberry cream:
80g cashews (soaked in hot water for at least 30min)
70g frozen or fresh blueberries
2tbsp coconut oil
30ml maple syrup
50g coconut cream/coconut butter
1tbsp lemon juice
Topping: coconut chips

Method:

Place all the ingredients for the base into a bowl and mix well. Line a small casserole dish with baking paper and press the dough into it. Place in the freezer.

For the blueberry cream, place all the ingredients into a food processor and mix until smooth. Pour on to the base and evenly distribute. Sprinkle some coconut chips on top and freeze for about 1-2h. Cut into slices. Store in the freezer or fridge in an airtight container.
