Hectic mornings? Grab an oatmeal square!

These oatmeal squares are super delish and the perfect breakfast for a hectic morning.

For me, there is no better way to start the day than with a quick snack full of super foods that gives me lots of energy for the day. These oatmeal squares are so easy to prepare. You just have to mix all the ingredients, bake them and you have some heavenly gooey oatmeal bars. Since they have a cake-like consistency, it’s also a great way to make sure your kids have a tasty and healthy breakfast to start the day with.

I’ve made this recipe countless times because it’s so delicious and convenient. Also, once you start making yourself a healthy and tasty breakfast you will never go back to store bought and finished products. The only way to really take care of yourself and knowing what you put into your body is by preparing food yourself. I hope with easy recipes like this, it will be fun for anybody! Before my intolerances I’ve never cooked or baked before and now I can’t imagine life without it. I just feel so much better and healthier since I really take care of myself.

I cut the oatmeal mixture into bars and store them in plastic wrap or an airtight box up to a week. You can either keep them in the fridge or on your kitchen counter.

INGREDIENTS

250 g rolled oats (glutenfree if needed)
3 tbsp chia seeds
95 g flaxseeds, grounded
1 tsp cinnamon, grounded
1 tsp baking powder
350 ml coconut milk
120 ml maple syrup

Method:

Preheat the oven to 180 ˚C. Ground 100 g oats in a personal blender. Mix it with the rest of the oats and dry ingredients (chia seeds, flaxseeds, cinnamon, baking powder). Whisk the coconut milk and maple syrup in a small bowl and add it to the dry ingredients. Line a casserole dish with baking paper and pour the mix into it.

Bake the oatmeal for 35-40 min. After the oatmeal is cooled off, cut it into 9 equal squares. Wrap the oatmeal squares into plastic wrap or keep them in an airtight box.
