Mother’s Day Cake

The perfect cake for Mother’s Day. Of course, you can also bake it on other days, because it is super delicious and easy to make.

You can decorate it beautifully and I guarantee you, it’s gonna be a hit at any occasion.


Serves 1 cake

150 g buckwheat flour
350 g almond flour
75 g ground flaxseed, in 180ml water
2 TL vanilla
100 g coconut sugar
100 ml maple syrup
30 ml coconut oil
250 ml coconut milk
Marzipan glaze
300 g almonds (without skin and soaked in warm water for 4 hours)
115 ml maple syrup
1 TL vanilla
1 Tbsp coconut oil, melted


Mix all ingredients in a bowl or with the help of a food processor and preheat the oven to 180 degrees. When the dough has a creamy consistency, you can now divide it evenly between two lined cake pans.

Bake the dough in the oven for 25 minutes and then let it cool completely.

In the meantime, prepare the glaze. Drain the soaked almonds and blend them together with the other ingredients for the glaze in a food processor.

Spread the glaze on the cake and if you like, you can garnish it with blueberries or edible flowers. The cake will keep in the refrigerator for up to 5 days.
