Tip: since lemon is a histamine liberator I would recommend leaving it out if you have a histamine intolerance! Then the bars are not lemony but still super healthy and delicious.

Serves 12-15 bars
Cooks in 10 Minutes
Difficulty Easy

INGREDIENTS

100g almond flour
120g cashews
30g desiccated coconut
Pinch of vanilla, grounded
2tbsp psyllium husk
2tbsp almond butter
2tbsp maple syrup
1 lemon, juiced
60ml water or plant drink

Method:

Place all the ingredients into a food processor and pulse until you have a chunky dough. Line a casserole dish with baking paper and firmly press in the dough. Decorate with some desiccated coconut and let it firm up in the fridge or freezer. Cut into bars and store in an airtight container in the fridge or freezer.
