Kale Salad With Herb Dressing

I know that Kale is not a vegetable everybody loves but I really enjoy it, especially chopped into small pieces, as large bites of Kale can be difficult to eat sometimes. Kale is so good for you and combined with the sweet potato this bowl gives me the perfect energy at lunch to get through the afternoon. Usually, many people like to use avocado for a salad like this but since it has a lot of histamine I love to use sweet potato instead. It also has some creaminess to it and makes the salad really nourishing. For some protein I use hemp seeds and cucumber to get the freshness. This salad is great to take away as well. Do not keep the salad with dressing over night, but rather add it before you eat it, as for histamine sensitive people vinegar, even histamine free one should not stay in the food for too long. I found this vinegar last year and it changed my life. It was really difficult to get the savory and spicy taste into a salad without vinegar but this histamine free one makes every salad a success without any symptoms.
INGREDIENTS
Method:
Wash the kale and separate it from the stems, then chop it into small pieces
Cut the cucumber and the steamed sweet potato into small pieces and sprinkle the hemp seeds on them
For the dressing, mix all the ingredients into a mixer and use as much dressing as you want for the salad. The rest you can store in the fridge
