Jelly Donuts

INGREDIENTS

70g coconut sugar
1tsp grounded vanilla
pinch of salt
1tsp baking powder
1/2tsp baking soda
130g rice flour
40g starch
2tbsp grounded flaxseeds
140ml plant milk e.g coconut milk or oat milk
80ml maple syrup
3tbsp coconut oil
Toppings: coconut, yogurt, jam, nut butter

Method:

Preheat the oven to 180°C. Place all the ingredients for the donuts into a large bowl and mix well. Distribute the dough evenly into silicon donut moles. Bake for 15 minutes and let it cool completely.

For the topping, spread yogurt and jam on top and drizzle some nut butter of our choice on it. Store in an airtight container in the fridge for up to 5 days.
