If you have a histamine intolerance, use nuts that work for you. For example tigernuts, almonds or brazil nuts. You can also use any nut butter and white vegan chocolate instead of dark chocolate.

INGREDIENTS

For the base:
150g nuts (I love to use peanuts and pecans but other nuts also work)
100g oats
80g maple syrup
25g coconut oil
For the caramel:
100ml water/plant milk
3tbsp peanut butter
500g pitted Medjool dates
For the topping:
60g halved peanuts
200g dark chocolate
2tbsp coconut oil

Method:

Place the nuts and oats into a food processor and mix them until you have a flour like consistency. Add the maple syrup and coconut oil and keep mixing until you have a dough. It can be a little crumbly but should stick together when you press them together. Line a small square tray with baking paper and place the dough on it. Press it into the tray. The base should be about 1-2cm thick. Place in the freezer while making the caramel.

For the caramel, place the dates, water/plant milk and peanut butter into the food processor and mix until you have a smooth cream. Add the halved peanuts and stir them in manually. Equally distribute the caramel on the base and place it back into the freezer.

Melt the chocolate and coconut oil in a water bath. Cut the base with the caramel into bars and cover them with chocolate. Store in the fridge or freezer.
