Healthy Caesar Salad

This dressing is the creamiest salad dressing I have made. Adding chickpeas to your salad boost the protein intake! Just try it out and let me know what you think!

 

Serves 1 salad
Cooks in 10 Minutes
Difficulty Easy

INGREDIENTS

2 cups lettuce
1 handfull tomatoes
1 handfull dried tomatoes
1 can chickpeas
Dressing
50 g cashews
80 ml oat milk
1/2 juice of lemon
pinch salt

Method:

Cut lettuce, tomatoes, sun-dried tomatoes small and add to a bowl.

Roasted chickpeas: rinse them well, add cumin, salt, paprika and olive oil and mix well. Fry in air fryer for 10 minutes or roast in the oven at 180 degrees for 15 minutes.

Dressing: add all ingredients to a mixer until its creamy.
