Say goodbye to boring salads! This colourful green summer salad with a creamy peanut sauce is perfect for the hot summer days.
Another tip, to make this low histamine just swap out the edamame with peas and use my tahini sauce instead of peanut sauce.
INGREDIENTS
1 cup
cooked edamame
1 cup
chopped red cabbage
1 cup
cooked quinoa
1 handfull
arugula
1/2 cup
roasted seeds
Peanut butter dressing
2 Tbsp
peanut butter
Shot
maple syrup
1/2
lemon juice
1/2 Tsp
miso
1 Tbsp
sesame oil
chili flakes
Method:
Add all ingredients for the salad and mix well.
Add the ingredients for the dressing to a jar and shake it well, you may have to add some water. Pour it over the salad and mix well. Serve fresh, it keeps in the fridge a few days.
