Nudeln mit Kürbis Kokos Sauce

Serves 3
Cooks in 40 Minutes
Difficulty Easy

INGREDIENTS

1 package Pasta of your choice
35g cashews (soaked in hot water for 30min)
450g pumpkin or squash, cooked or roasted
120ml water
1 Brokkoli or package of spinach
2tbsp nutritional yeast
1/2 lemon, juiced
1/2 tsp paprika powder
to taste salt

Method:

Rinse the Cashews and place them in a mixer with the spices, water cooked pumpkin and nutritional yeast. Mix until you have a super creamy sauce.

Cook the pasta as written on the package and add broccoli or a green veggie of your choice into the boiling water. Drain and serve with the creamy sauce
