How to make pumpkin puree?

One option is to buy pumpkin puree in the supermarket. You can find it canned or even in the baby food section. Just make sure there is no sugar in it. Another option is to make it yourself just by cooking pumpkin in water and the mixing it with a blender.

75g oat flour
20g cacao powder
1tsp baking powder
1tsp pumpkin spice
1/2tsp baking soda
Pinch of vanilla
Pinch of salt
60g chocolate chips
1tsp chia seeds (soaked in 3tbsp of water for 5min)
120g pumpkin puree
30ml coconut oil
40g coconut sugar
60g maple syrup


Preheat the oven to 180°C and line a muffin tray with muffin paper. Place all the ingredients into a bowl and mix with a spoon. Fold in the chocolate chips and distribute evenly into the the muffin tins. Bake for 20-25min and let it cool off. You can store the muffins in an airtight box for a few days or even freeze them.
