Chili sin carne

This recipe is not suitable if you have a histamine intolerance. Instead, try my super creamy low histamine curry.

Winter Curry

Serves 2-3
Cooks in 20 Minutes
Difficulty Easy

INGREDIENTS

1 onion, diced
1 garlic clove, diced
1tbsp olive oil
1 Jalapeño (use as much as you want)
1 red bell pepper, diced
2 stalks of celery, finely chopped
1 can kidney beans
to taste salz
generous pinch of ground cumin
generous pinch of dried oregano
1 can diced tomatoes
1tbsp tomato paste
120ml vegetable broth
For the coconut rice:
2 cups basmati rice
3 cups coconut milk
to taste salt
Toppings: coconut yogurt/sour cream and coriander

Method:

Place the onion and garlic into a pot and roast for a few minutes. Add the vegetables and herbs and mix well. Pour the vegetable broth, tomato pasta and chopped tomatoes on top. Finally add the kidney beans and simmer for 15min.

For the rice, add the basmati rice and coconut milk in a pot and cook until soft. Add salt to taste. Serve the chili sin carne with the rice, yogurt and coriander.
