Pizza all day every day!

Who said Pizza can only be savoury? With this healthy breakfast Pizza you can finally enjoy a sweet Pizza and have the perfect start into the day! The base of the Pizza holds perfectly together, is crunchy and full of good ingredients. The base of the Pizza is made from oats, which is basically my favourite ingredient. I make lots of recipes with oats and enjoy them every day for breakfast. I love making porridge, granolas and mueslis, energy balls, pancakes, overnight oats and of course this heavenly breakfast Pizza. No matter what day it is, I will start my day with oats. They are incredibly nutritious, full of fibre and will fill you up for a long time.

My favourite part about this recipe is that you can get super creative with the toppings. Hence, this recipe can never get boring since there are just so many options. My favourite ones are coconut yogurt blend together with mixed berries and decorated with seeds and almond butter. I also love the plain coconut yogurt with fresh fruits, honey, shredded coconut and seeds. The options are endless! Serves 2 Pizzas
Cooks in 30 Minutes
Difficulty Easy

INGREDIENTS

Pizza Base:
110 g oat flour/oats grounded in a mixer (glutenfree if needed)
150 g unsweetened apple sauce
1 tbsp grounded flaxseeds/chia seeds
1 tbsp coconut sugar
For the toppings:
150 g coconut yogurt
1-2 tbsp maple syrup
80 g mixed frozen berries/fresh fruit
nuts/seeds

Method:

Preheat the oven to 180°C and line a baking tray with baking paper. Soak 1 tbsp of grounded flaxseeds/chia seeds in a glass with 3 tbsp of water for 10 minutes. Place all the ingredients for the Pizza base (oat flour, apple sauce and soaked flaxseeds) into a large bowl and mix with your hands until you have a nice dough. Place the dough on the lined baking tray and divide the dough in half. Form into two Pizzas and bake for 20 Minutes until golden brown and firm.

In the meantime prepare the topping. You have so many options here. I love to mix the coconut yogurt with the berries and maple syrup and decorate with berries, nuts, seeds or almond butter. I also love to use the plain coconut yogurt and decorate with fresh fruits, nuts and seeds and sweeten with some honey.
