Who loves a warm breakfast on the weekend?

This berry & oat crumble is one of my favourite breakfasts! I jut love something warm and fresh from the oven when I wake up in the morning. While I recommend using fresh berries, they are not available year around so you can also use frozen ones. This is an amazing healthy alternative to the classical crumble or other heavy breakfast options. It’s so tasty that you would never think its made out of so many healthy ingredients. The combination of crunchy oats and juicy berries is amazing!

Serves 1 casserole dish
Cooks in 30 Minutes
Difficulty Easy

INGREDIENTS

For the mixture:
600 gr mixed berries (fresh or frozen)
2 dates, pitted and chopped (sulfide free)
1 tsp cinnamon
½ tsp ground nutmeg
For the crunchy layer:
180 gr oats, gluten free
80 gr macadamia nuts
7 dates, pitted and chopped (sulfide free)
4 tbsp coconut oil
3 tsp ginger, (fresh or grounded)
1 tsp vanilla powder

Method:

Pre-heat the oven to 190 ˚. Place 600 gr mixed berries, 2 dates, cinnamon and ground nutmeg into a pan and cook on low temperature until the berries start to soften. Tip everything into an ovenproof casserole dish.

Put the oats, macadamia nuts, 7 dates, coconut oil, ginger and vanilla into a bowl and gently combine everything with your fingertips and spread the mixture evenly over the berries.

Pop everything into the oven and bake for 20-25 min until the crumble is golden brown. Remove it from the oven and leave it to cool off for a few minutes before indulging.
