Berry Chia Pudding

INGREDIENTS

4 tbsp chia seeds
50g berries (frozen or fresh)
250ml coconut/oat drink
1 tsp maple syrup
Pinch of vanilla
Toppings: coconut yogurt, granola, seasonal fruit

Method:

Place the chia seeds into a bowl and set aside. Place the berries, plant drink, maple syrup and vanilla into a mixer and pulse until smooth. Pour on to the chia seeds. Stir with a spoon, cover the bowl and let it soak in the fridge for at least an hour or overnight.

Serve with creamy coconut yogurt, seasonal fruit and granola!
